New London Light Aegean Sky from Salcombe Distillery was carefully distilled and crafted using six core botanical distillates and extracts, as well as six natural flavours, all handpicked to highlight the vibrant Mediterranean coastlines of the Aegean Sea and to create a flavour profile reminiscent of the region’s finest citrus and olive groves.

To make the base for New London Light Aegean Sky, the master distillers first perform a ‘botanical steep.’ Six hand-selected and carefully balanced botanicals, including kumquat, bergamot, olive, and rosemary, are steeped in a neutral grain spirit and water for 48 hours at approximately 40% ABV. The use of alcohol to extract and transport flavour is a critical step in the process.

The ‘botanical steep’ is then distilled in a rotary vacuum still, a process that removes the alcohol without removing the flavour. This results in a highly concentrated core flavour distillate that serves as the foundation for New London Light Aegean Sky. This core flavour distillate is then carefully blended with a further 6 natural flavours, including blood orange and rosehip, then stabilised with the unusual use of kombucha.

Tasting Note

Bright citrus aromas of blood orange, mandarin and kumquat on the nose. Fresh, bitter citrus dominates the palate, layered with floral rosehip and bergamot, earthy rosemary and notes of olive throughout. Bitter and dry on the finish, with woody quassia balanced by herbaceous rosemary and a savoury olive undertone.
