About the Producer
One of the few Côte d’Or producers still using ultra-traditional methods. Grapes come from vines at least 15 years old. Whole bunches, not de-stemmed, ferment in open wooden vats with natural yeasts and no temperature control. The cap is gently trodden by foot over three weeks to extract color, tannins, and fruit. The wine ages for at least two years in French oak barrels, racked two to three times annually to remove deposits. Bottling is done by gravity directly from barrel, unfiltered, with clarity checked by candlelight.

Ideal with Boeuf Bourguignon (all the better if made with Charolais beef, a breed associated with Burgundy), game dishes.
