Wildman Wine, led by Tim Wildman MW, champions fun, fresh, fault-free Australian Pet-Nat. Since 2014, fruit—mainly Nero d’Avola and Zibbibo—from Adelaide Hills and McLaren Vale has powered vibrant wines like Astro Bunny and Piggy Pop. The cooler 2023 vintage allowed slow ripening, preserving freshness and acidity. Grapes were handpicked from premium sites, with careful early picking for whites. A 24-hour skin contact boosts aromatics. Bottled before fermentation finishes, the wines have gentle foam. Wild yeast, no additives, filtration, fining, or sulphur—100% natural goodness.

Fun Fact
Pét-nats are sparkling wines made in a manner that predates the so-called “traditional method” used in Champagne. Rather than induce a second fermentation in the bottle, makers of pét-nat simply bottle the wine before the initial fermentation has ended.
