About the Producer
Masters of Wine Giles Cooke and Fergal Tynan founded Thistledown Wines in 2010, crafting small-batch wines from iconic sites in McLaren Vale, Barossa Valley, and Adelaide Hills. The Great Escape is their benchmark cooler-climate Chardonnay, made from elevated vineyards with a long ripening period that preserves natural sugar and acidity balance. It offers focused citrus fruit, moderate alcohol, and a crisp, mouth-watering finish. The fruit was pressed immediately after harvest; free-run juice settled in tank. Fermentation was wild and natural in used French oak and concrete eggs, with no malolactic fermentation to retain freshness.
