About the Producer
Sicily’s geography and climate are ideal for growing healthy, ripe grapes. Palazzo del Mare’s vineyards sit at 200–300m altitude, where cool nights help preserve acidity. Winds naturally limit yields, and earlier harvests result in bright, fresh wines. The Catarratto shows crisp, citrusy fruit. Grapes are gently pressed, cold macerated overnight for aromatics, then fermented at 14°C in stainless steel and left on lees with battonage. No malolactic fermentation.
