About the Producer
Jean-Paul Paquet, owner of Domaine de Fussiacus, believes knowledge from vineyard experience is key to great wine. He manages 11 hectares in Mâconnais, Burgundy, producing wines of typicity, finesse, and elegance. The Fuissé region (250-300m altitude) has mainly argilo-calcareous soils. Vines average 25 years, farmed organically (not certified) and hand harvested. Grapes are gently pressed pneumatically. Fermentation occurs in temperature-controlled stainless steel tanks with natural yeast. Malolactic fermentation is completed before bottling, preserving the wine’s refined character.
