Donna Elvira Fiano DOCG
Fiano is an ancient Roman grape that was given a ‘Latin’ name to differentiate it from Greek grapes. It’s actual name comes from its previous name, Apianus or Apiane, which is tied to the old Latin word for ‘bee,’ because bees loved these sugary grapes.
The grapes are partially destemmed and delicately pressed once they arrive at the vineyard. After that, the must is transferred to stainless steel tanks and kept at a low temperature (about 16-18 °C) for around 20 days, during which fermentation takes place with no malolactic fermentation. It sits on the lees for 5 months in the tank before being racked twice during fermentation and twice after. Prior to distribution, it is matured in the bottle for one month.
The colour is straw yellow with green reflections in the wine glass, and the perfume is delicate and suggestive of citrus peel, quince, Williams Pear, and yellow flowers on the nose.
A sharp acidity balances the gentle, round mouthfeel while refreshing the rich fruit flavours.
