About the Producer
Viognier is a challenging grape, budding early and vulnerable to frost, with thick skins needing patience for full flavor. These vines enjoyed warm days and cool nights, enhancing the wine’s body and acidity. Grapes were handpicked, de-stemmed without crushing, then gently pressed. Juice was chilled and settled overnight before racking off solids and inoculation with pure wine yeast. Fermentation occurred at a cool 50°F in temperature-controlled stainless steel tanks to preserve the grape’s fresh fruit character.
Food Pairing
Pairs well with Gruyere or Camembert cheese, sushi, or tarragon chicken.
