About the Producer
The Subirat Parent variety in Vilarnau Gold Edition’s “licor de expedición” is native to Penedès, known for its intense floral and fruit aromas. The organic vineyard is in Central Penedès, La Granada, planted in 2004 on calcareous clay soil, with vines re-grafted in 2010. Three base wines—Macabeo, Parellada, and Xarel.lo—are made separately. Grapes are chilled to preserve aromatics and prevent oxidation. The first fermentation lasts 30 days at 15°C, followed by blending. A second fermentation occurs in bottle, then the cava ages on lees before disgorgement.
