About the Producer
Bricco del Drago vineyards are part of Poderi Colla’s 25-hectare Cascine del Drago Estate, located 7 km from Alba in San Rocco Seno d’Elvio. The vineyards face west, at 330-400m elevation, with vines averaging 20 years old and a density of 5,000 vines/ha. Yields are around 4,000 litres/ha. Dolcetto is harvested late September, Nebbiolo in early October. Soils give Dolcetto complexity and structure. Grapes are vinified separately: Dolcetto macerates 5-8 days at 25°C, Nebbiolo 10-12 days at 30°C. The wines are blended and aged 12-18 months in French and Slavonian oak (new and 2-year-old) before racking to stainless steel.
Food Pairing
