About the Producer
The south-facing vineyards have chalky, mineral soils that enable full ripening and excellent drainage. The 35-year-old vines are trained Piemonte style on low Guyot trellis, planted at 4,000–4,500 vines/ha, yielding 6,600 lt/ha. Grapes are hand harvested a week early to retain acidity for sparkling wines. Whole bunches are pressed in a pneumatic press and fermented under temperature control in stainless steel tanks at Araldica’s Azienda Agricola La Battistina. The wine spends 3–4 months on lees before being fined, filtered, and bottled.
