About the Producer

Our classic non vintage blend of the best parcels of Chardonnay and Pinot Noir, 70% of the base wine was from 2017, the remainder reserve wines from previous vintages. The grapes were whole bunch pressed and cool fermented separately, with only the free run juice used for this sparkling. With secondary fermentation taking place in bottle, the wine was then aged in bottle for a minimum of 5 years, after which the bottles were disgorged and aged for a further 6 months on cork.
