About the Producer

Harvested in the cool early morning and protected under inert gas. On arrival at the winery, the fruit was destemmed, crushed and lightly pressed. The juice was then clarified by cold settling, after which it was racked and then fermented for 28 days in stainless steel tanks using selected yeasts. Aged on the fine lees in tank for 3 months before bottling.
