The secret to this smooth tasting nectar is the finishing in intensely charred barrels.
They take conventional American Oak barrels and sear the living heck out of them (in the whiskey world, barrels are typically charred from levels one to four, but these are scorched to LEVEL FIVE for added depth of flavour)
The distillery’s guys affectionately refer to these charred casks as ‘flaming pigs.’
The whiskey has a deeper, more nuanced flavour from the charred barrels, with hints of vanilla, spice, caramel, butterscotch, and mild smoke.
