Chateau L’Ermitage Blanc ‘Auzan’: A Sustainable White from the Rhône Valley

Chateau L’Ermitage is located in the Costières de Nîmes appellation of France’s Southern Rhône valley. This organic estate farms 20-year-old vines on the pebbly soils of rolling hills that cascade towards the Mediterranean Sea. The cooling marine breezes moderate summer temperatures, allowing gradual ripening that develops concentrated flavours in the grapes.

Viticulture and Vinification

This wine is composed of 60% Roussanne, 20% Grenache Blanc and 20% Viognier from vineyards certified organic by Terra Vitis. To preserve fresh fruit aromas, grapes are harvested early by hand with yields kept low at 50hl/ha. After destemming, the grapes are gently pressed and must is cooled to 6°C to facilitate clarification before fermenting at 16°C in stainless steel. The wine matures on fine lees for 3 months to accentuate the flavours.
