About the Producer
The grapes for this Cabernet Sauvignon come from vineyards bordering the warm Swartland/Wellington area and the Breede River Valley. Diverse soils add complexity. Vines over 25 years old yield 6–8 tonnes/ha, producing concentrated fruit. Grapes are destemmed and crushed, with fermentation starting slowly at 17°C, rising to 22–24°C after three days for full fermentation. Fermentation stops at 5 g/l residual sugar before pressing, then the wine returns to stainless steel tanks to ensure soft tannins and avoid harsh extraction. Malolactic fermentation follows, with lees aging until bottling.
