A deep cherry colour with violet tints. The aroma is intense, full of ripe red seasonal fruit (cherries, blackberries, blackcurrant) & a touch of black pepper. This Bobal shows distinctive power, vibrant fruit, freshness with soft and ripe tannin.
About the Producer
Owner and winemaker Rosalia Molina crafts organic wines at one of Spain’s highest wineries in DO Manchuela. At 1,100m altitude, grapes benefit from a large diurnal range, promoting even ripening and natural acidity. Certified organic, her vineyards welcome chickens, sheep, and pigs to boost biodiversity. Grapes are hand harvested and fermented naturally with native yeasts, aged in clay amphora and French oak for texture and complexity. Skin contact lasts 2–3 weeks at controlled temperature, followed by spontaneous alcoholic fermentation with gentle pumping over for 5 weeks. Malolactic fermentation occurs in barrel.

Best with richly flavoured meat. Roasts, cheeses and cold cuts.

Bobal derived from the Latin word “bovale,” refers to the shape of a bull’s head, mirroring the tightly packed, distinctive clusters of the grapes.
