About the Producer
Villa Sandi, a Palladian-style estate dating to 1622, lies between the Valdobbiadene DOCG Prosecco and Montello and Colli Asolani DOC areas. Their Asolo DOCG vineyard is certified a ‘biodiversity friend,’ avoiding monoculture to encourage local flora and fauna. The pale straw-yellow Prosecco features fine bubbles and aromas of ripe golden apple, reflecting the medium-depth decarbonated soils on Montello and Colli Asolani hills. Vines are single espalier trained with double canopy, at 3,000 vines/ha. Grapes are gently pressed, fermented with cultured yeasts under controlled temperature, then bottled after settling.
