About the Producer
The vineyards in Banghoek Valley, Stellenbosch, sit at 300-500m elevation with mostly southerly exposure, ensuring moderate temperatures and slow ripening. Soils are leached granite and sandstone with gravel for drainage and clay for moisture retention. Vines are hand-pruned on steep slopes, yielding 5–8 tonnes/ha. Grapes are hand-harvested, berry sorted, and fermented naturally in stainless steel, finishing with a pure yeast strain. After gentle extraction and pressing, the wine undergoes malolactic fermentation in French oak barrels, with multiple rackings for clarity. Aged 22 months before bottling.
Food Pairing
