About the Producer
Pruning by hand. Prunings minced and left on the ground. Trellised plots. Handpicked harvesting.
Semi-carbonic maceration at 30°C (86°F) in temperature controlled stainless steel tanks. 8 to 12 days vatting depending on the vintage. Aged between 7 to 10 months in stainless steel or expoxy coated cement vats.
Food Pairing
White meats, semi hard cheese and can even be served slightly chilled as an aperatif.
